Bissap Hibiscus Juice Recipe

Ingredients
  

  • 2 cups dried hibiscus flowers
  • 8 cups water
  • 1 cup granulated sugar
  • 1 (2‑inch) piece fresh ginger, peeled and thinly sliced
  • ¼ cup fresh lime juice

Method
 

  1. Pour 8 cups of boiling water over the 2 cups dried hibiscus flowers and sliced ginger in a large heatproof bowl. Cover and steep at room temperature for at least 4 hours, until deep red.
  2. Strain the concentrate into a pitcher, pressing on the solids. While still warm, stir in 1 cup sugar until dissolved, then stir in ¼ cup lime juice. Cover and chill until cold, about 2 hours.
  3. Fill glasses with ice and pour the chilled bissap over it. Tuck fresh mint leaves into each glass and serve.

Notes

The hands‑on time is quick, but the steep and chill add several hours. Start the steeping in the morning or the night before so the concentrate is ready when you want it. If you prefer a lighter drink, dilute the concentrate with cold water or soda water just before serving.
