Bisquick Banana Bread Recipe

Ingredients
  

  • 3 overripe bananas (about 1 cup mashed)
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 ½ cups Bisquick mix

Method
 

  1. Mash the bananas in a large bowl until mostly smooth with a few small lumps.
  2. Stir in the sugar and eggs until the mixture is pale and thick.
  3. Fold in the Bisquick mix with a spatula just until no dry pockets remain.
  4. Transfer batter to a greased, parchment-lined 9x5-inch loaf pan and bake at 350°F for 50-60 minutes, until a toothpick comes out with moist crumbs.
  5. Cool in the pan 10 minutes, then turn out onto a rack to cool completely before slicing.

Notes

If you like a little extra flavor, a teaspoon of vanilla extract can be stirred in with the sugar and eggs. The loaf needs to cool fully for clean slices; if you cut it warm, the crumb will be sticky and the slices may tear. A fully cooled loaf also slices more evenly for the freezer.
