- Preheat oven to 375°F (190°C). In a large skillet over medium-high heat, cook sausage, breaking it apart, until browned and crumbled, 6-8 minutes. Add the butter if the pan looks dry.
- Sprinkle flour over sausage, stir and cook 1 minute. Slowly whisk in milk, then add salt, pepper, garlic powder, and cayenne. Bring to a simmer and cook, whisking, until thickened, 3-5 minutes.
- Cut biscuits into quarters. Layer half in a greased 9x13-inch dish, top with half the gravy and half the cheese. Repeat layers.
- Bake 25-30 minutes until biscuits are golden and gravy bubbles. Cool 5 minutes, then slice into squares and serve.
Notes
Let the casserole rest for 5 minutes before slicing so the gravy sets up enough to hold its shape. If you like extra black pepper, grind some fresh over the top before serving.
