Ingredients

  • 1 lb pork breakfast sausage
  • 2 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • pinch of cayenne pepper
  • 1 can (16.3 oz) refrigerated buttermilk biscuits
  • 1 cup shredded sharp cheddar cheese

Method

  1. Preheat oven to 375°F (190°C). In a large skillet over medium-high heat, cook sausage, breaking it apart, until browned and crumbled, 6-8 minutes. Add the butter if the pan looks dry.
  2. Sprinkle flour over sausage, stir and cook 1 minute. Slowly whisk in milk, then add salt, pepper, garlic powder, and cayenne. Bring to a simmer and cook, whisking, until thickened, 3-5 minutes.
  3. Cut biscuits into quarters. Layer half in a greased 9x13-inch dish, top with half the gravy and half the cheese. Repeat layers.
  4. Bake 25-30 minutes until biscuits are golden and gravy bubbles. Cool 5 minutes, then slice into squares and serve.

Notes

Let the casserole rest for 5 minutes before slicing so the gravy sets up enough to hold its shape. If you like extra black pepper, grind some fresh over the top before serving.
