Ingredients
  

  • 1 lb ground beef
  • 1/2 cup finely diced yellow onion
  • 2 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 1/2 tsp smoked paprika
  • 2 cups shredded sharp cheddar cheese
  • 1 (32 oz) bag frozen tater tots
  • 1 cup shredded iceberg lettuce
  • 1/4 cup finely diced dill pickles
  • 1 tsp toasted sesame seeds

Method
 

  1. Brown the ground beef and onion in a skillet over medium-high heat, about 7 minutes. Drain fat, then stir in garlic, salt, pepper, and Worcestershire sauce and cook 1 minute more.
  2. Whisk together the mayonnaise, ketchup, mustard, relish, vinegar, and paprika until smooth.
  3. Spread the beef mixture in a 9x13-inch baking dish. Drizzle with half the sauce, top with cheese, and arrange frozen tater tots in a tight single layer.
  4. Bake at 400°F (200°C) for 25 to 30 minutes, until tots are deep golden and cheese is bubbling. Broil for the last 1 to 2 minutes if you want extra crunch.
  5. Rest the casserole for 5 minutes, then top with shredded lettuce, diced pickles, the remaining sauce, and sesame seeds. Serve warm.

Notes

Let the casserole rest before adding the fresh toppings so the lettuce doesn't wilt instantly. For the crispest tots, avoid thawing them and drain as much fat from the beef as possible. If you're using American cheese, the texture will be a bit creamier than with cheddar.
