- Whisk together the mayonnaise, ketchup, relish, vinegar, onion powder, garlic powder, paprika, and salt in a small bowl. Set aside.
- Heat a large nonstick skillet or griddle over medium-high heat. Place a tortilla in the pan, add a 2-ounce portion of beef, and smash it flat to about 4 inches. Cook 2 minutes until edges are crispy, flip, add a half slice of cheese, and cook 1 to 2 minutes more. Repeat with remaining tortillas and beef.
- Transfer each taco to a plate. Top with sauce, lettuce, onion, pickle slices, and sesame seeds if using. Fold and serve immediately.
Notes
The sauce can be made up to a week ahead and kept in the fridge. For the crispest edges, press the patty as thin as you can without tearing the tortilla, and avoid moving it around while the first side sears.
