Big Mac Smash Burger Tacos Recipe

Ingredients
  

  • 1 lb (450g) ground beef, 80/20
  • 4 soft taco-size flour tortillas
  • 4 slices American cheese
  • Shredded iceberg lettuce
  • Dill pickle chips
  • 2 tbsp fine dice white onion
  • Toasted sesame seeds (optional)
  • 1 tbsp vegetable oil
  • Salt and black pepper
  • 1/4 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp fine sea salt

Method
 

  1. Whisk together the mayo, ketchup, relish, vinegar, onion powder, garlic powder, smoked paprika, and salt until smooth. Set aside.
  2. Divide beef into 4 loose balls. Heat oil in a cast-iron skillet over high heat. Add 2 balls, smash flat, cook 2 minutes, season, flip, and cook 1 minute. Repeat with remaining beef.
  3. After flipping, top each patty with cheese, cover, and melt 30 seconds. Remove patties, reduce heat to medium, and toast tortillas 20 seconds per side.
  4. Spread sauce on tortillas, add a patty, lettuce, pickles, and onion. Sprinkle sesame seeds, fold, and serve immediately.

Notes

If you’d like the onion to be less sharp, rinse the dice under cold water and pat dry before adding. The cooked patties can be held in a 200°F oven for up to 10 minutes while you finish the rest.
