Big Mac Pasta Salad Recipe

Ingredients
  

  • 12 oz elbow macaroni
  • 1 lb ground beef (80/20)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup dill pickle chips, roughly chopped
  • ½ small white onion, finely diced
  • 2 cups shredded iceberg lettuce
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp sweet pickle relish
  • 1 tbsp white vinegar
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste

Method
 

  1. Cook macaroni in salted boiling water until al dente, about 7 minutes. Drain and rinse with cold water until cool.
  2. Brown ground beef in a skillet over medium-high heat, breaking it apart, until no longer pink, about 6 to 8 minutes. Drain fat, season with salt and pepper, and let cool slightly.
  3. Whisk together mayonnaise, ketchup, relish, vinegar, paprika, garlic powder, and onion powder in a large bowl until smooth, about 30 seconds.
  4. Add pasta, beef, cheese, pickles, onion, and lettuce. Toss until evenly coated. Serve immediately or chill for 30 minutes.

Notes

If making ahead, keep the lettuce separate and fold it in just before serving. The salad tastes even better after a 30-minute chill.
