Ingredients
  

  • 1 cup (120 g) whole wheat pastry flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp fine sea salt
  • 1 large very ripe banana
  • 1 large egg
  • 2 tbsp melted unsalted butter
  • 1 tsp vanilla extract
  • 1/3 cup plain full-fat Greek yogurt
  • 1/2 cup fresh or frozen mixed berries

Method
 

  1. Mash the banana in a bowl until smooth, then whisk in the egg, melted butter, vanilla, and yogurt.
  2. In a small bowl, stir together the flour, baking powder, baking soda, and salt.
  3. Fold the dry ingredients into the wet mixture until just combined, then gently fold in the berries.
  4. Pour the batter into a parchment-lined 6-inch cake pan and bake at 350°F (180°C) for 22 to 25 minutes, until a toothpick comes out clean. Cool completely.
  5. Spread Greek yogurt over the cooled cake, top with fresh berries, and serve.

Notes

If your banana isn’t very ripe, you can leave the cake plain or add a tiny drizzle of maple syrup to the batter. The cake tastes best the day it’s made, but you can bake it a day in advance and frost it right before the party.
