- Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish. In a large bowl, whisk the milk, maple syrup, eggs, vanilla, and melted butter until smooth.
- In a small bowl, stir the oats, baking powder, cinnamon, and salt. Pour the wet mixture over the oats and stir until just combined.
- Gently fold in the frozen berries, then scrape the batter into the prepared dish and spread it evenly.
- Bake for 35 to 40 minutes, until the top is golden and a toothpick comes out clean.
- Cool for 5 to 10 minutes, then scoop into bowls and serve warm with a splash of milk or yogurt.
Notes
If using fresh berries, reduce the milk by 2 tablespoons. For a nutty crunch, stir 1/2 cup chopped walnuts or pecans into the batter before baking. This oatmeal reheats well, so it is great for meal prep.
