Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups milk
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp melted unsalted butter
  • 2 cups frozen mixed berries

Method
 

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish. In a large bowl, whisk the milk, maple syrup, eggs, vanilla, and melted butter until smooth.
  2. In a small bowl, stir the oats, baking powder, cinnamon, and salt. Pour the wet mixture over the oats and stir until just combined.
  3. Gently fold in the frozen berries, then scrape the batter into the prepared dish and spread it evenly.
  4. Bake for 35 to 40 minutes, until the top is golden and a toothpick comes out clean.
  5. Cool for 5 to 10 minutes, then scoop into bowls and serve warm with a splash of milk or yogurt.

Notes

If using fresh berries, reduce the milk by 2 tablespoons. For a nutty crunch, stir 1/2 cup chopped walnuts or pecans into the batter before baking. This oatmeal reheats well, so it is great for meal prep.
