- Heat a large skillet over high heat. Add 1 tbsp vegetable oil, then sear the beef in a single layer for 1 minute without moving, stir-fry another 1-2 minutes until browned. Remove to a plate.
- In the same pan, add remaining oil, broccoli, and carrot. Stir-fry 3 minutes, then add bell pepper, garlic, and ginger. Cook 1 minute more.
- Loosen udon noodles under warm water and add to the pan with soy sauce, mirin, and brown sugar. Toss to coat, pour in cornstarch slurry, and stir-fry 2 minutes until sauce thickens. Return beef to the pan.
- Remove from heat, drizzle sesame oil, and toss with green onions and sesame seeds. Serve immediately.
Notes
If the noodles seem dry while tossing, add a small splash of water. The sauce thickens quickly, so keep the heat high and your hands moving. Any leftover stir fry can be reheated in a skillet with a tablespoon of water to revive the texture.
