Beef Tips and Gravy Recipe

Ingredients
  

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup all-purpose flour, divided
  • 3 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 tbsp butter
  • 2 tbsp fresh parsley, chopped

Method
 

  1. Season the beef with salt and pepper, toss with half the flour, and sear in batches in hot oil until deeply browned.
  2. Sauté the onion and mushrooms in the same pot until softened, then stir in the garlic.
  3. Return the beef to the pot with the broth, Worcestershire sauce, and Dijon mustard, cover, and simmer for 75 minutes until fork-tender.
  4. Whisk the butter and remaining flour into the simmering liquid until the gravy thickens and turns glossy.
  5. Return the beef to the gravy, warm through, and ladle over mashed potatoes or noodles with parsley on top.

Notes

If you're making this ahead, the gravy actually thickens more as it sits in the fridge, so plan to loosen it with a little extra broth when reheating. This recipe is easy to double for a crowd, just use a bigger pot so the beef still has room to brown properly in step 1.
