Beef Teriyaki Stir Fry Recipe

Ingredients
  

  • 1 lb flank steak or sirloin, sliced thin against the grain
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sake
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil, divided
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 onion, sliced
  • 1 cup snap peas
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch mixed with 1 tbsp water

Method
 

  1. Whisk soy sauce, mirin, sake, and brown sugar in a small bowl until the sugar dissolves, about 30 seconds. Set aside.
  2. Heat a wok over high heat. Add 1 tbsp oil and sear the beef in batches, 1 minute per side, until browned but still pink inside. Transfer to a plate.
  3. Add remaining 1 tbsp oil to the pan. Stir-fry broccoli, bell pepper, onion, and snap peas for 3 to 4 minutes until bright and crisp-tender. Add garlic and ginger, stir 30 seconds.
  4. Return beef, pour in sauce, bring to a boil, stir in cornstarch slurry, and cook 1 minute until thickened. Serve over rice.

Notes

For the best texture, slice the beef across the grain into thin strips. If your pan is small, cook the beef in two batches so it sears properly.
