Beef Stuffed Shells Recipe

Ingredients
  

  • 12 oz jumbo pasta shells
  • 1 lb lean ground beef (90/10)
  • 1/2 cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 1 cup whole-milk ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 tbsp chopped fresh parsley, plus more for garnish
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper
  • 1 jar (24 oz) marinara sauce
  • Red pepper flakes, for serving (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Brown beef in a skillet over medium-high heat, 6 minutes. Add onion, cook 2 minutes, then garlic for 30 seconds. Season with 1/4 tsp salt and pepper; drain fat.
  2. Boil shells in salted water for 7 to 8 minutes until pliable but firm. Drain and spread on a baking sheet to cool.
  3. Mix ricotta, 3/4 cup mozzarella, Parmesan, egg, parsley, and remaining 1/4 tsp salt. Fold in cooled beef mixture.
  4. Stuff each shell with about 2 tablespoons filling, pressing gently to close.
  5. Spread 1 cup marinara in a 9x13 inch dish. Arrange shells, spoon remaining sauce on top, and sprinkle with remaining 1/4 cup mozzarella. Bake 25 minutes until bubbly. Rest 5 minutes, garnish with parsley and red pepper flakes, and serve.

Notes

Let the dish rest for a few minutes after baking so the filling sets and the shells are easier to lift out. If your sauce is on the thicker side, stir in a splash of water before baking to keep everything moist.
