Beef Rib Steak Recipe

Ingredients
  

  • 2 bone-in beef rib steaks, about 12 oz each and 1½ inches thick
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp neutral oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, smashed
  • 2 sprigs fresh thyme

Method
 

  1. Pat the steaks dry and season both sides with salt and pepper. Set a heavy skillet over medium-high heat.
  2. Add the oil to the pan, then lay the steaks in and sear without moving for 4 to 5 minutes, until a deep brown crust forms.
  3. Flip the steaks and add the butter, garlic, and thyme. Tilt the pan and baste the steaks with the foaming butter for 1 to 2 minutes, until an instant-read thermometer reaches 125°F (52°C) for medium-rare.
  4. Transfer the steaks to a cutting board, spoon the remaining pan butter over them, and rest 5 minutes. Slice across the grain and serve.

Notes

If time allows, take the steaks out of the fridge 20 minutes before you cook them so they come closer to room temperature; this helps them cook more evenly.
