- Whisk together soy sauce, brown sugar, garlic, ginger, sesame oil, and cornstarch slurry in a small bowl. Set aside.
- Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Sear beef in a single layer, seasoning with salt and pepper, for about 2 minutes per side. Transfer to a plate.
- Add remaining 1 tbsp vegetable oil to the pan. Stir fry broccoli, bell pepper, and snap peas for 3 to 4 minutes, until crisp-tender.
- Cook ramen noodles 1 minute less than package directions, then drain. Return beef to the pan, add noodles and sauce, and toss for 1 to 2 minutes until the sauce thickens.
- Toss once more, transfer to plates, top with green onions and sesame seeds, and serve hot.
Notes
Cook the noodles just before adding them to the stir fry so they stay warm and separate easily. If your pan is on the smaller side, sear the beef in two batches to get a good crust.
