Beef Noodle Soup Recipe

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 lb beef sirloin steak, thinly sliced against the grain
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, peeled and minced
  • 6 cups low-sodium beef broth
  • 3 tbsp soy sauce
  • 2 whole star anise
  • 1 cinnamon stick
  • 8 oz dried rice noodles (medium width)
  • 2 heads baby bok choy, leaves separated
  • 2 scallions, sliced thin
  • 1 lime, cut into wedges
  • Pinch of red pepper flakes (optional)

Method
 

  1. Heat oil in a large pot over medium-high heat. Sear beef slices 1 to 2 minutes per side until browned, then transfer to a plate.
  2. Reduce heat to medium. Sauté garlic and ginger for 30 seconds. Add broth, soy sauce, star anise, and cinnamon stick. Simmer 10 minutes.
  3. Add rice noodles and bok choy. Simmer 3 to 5 minutes until noodles are tender.
  4. Return beef to the pot to warm through, about 30 seconds. Ladle into bowls, top with scallions, a lime wedge, and red pepper flakes if using. Serve immediately.

Notes

Slice the beef as thinly as you can for the quickest sear and most tender texture. Rice noodles will keep absorbing liquid, so serve the soup right away. If you have leftovers, add a little extra broth when reheating to loosen it back up.
