Beef Lombardi Casserole Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz egg noodles, cooked and drained
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded mozzarella, divided
  • 1/2 cup grated Parmesan

Method
 

  1. Brown ground beef and onion in a skillet over medium-high heat for 6 to 8 minutes, drain fat, then add garlic and cook 1 minute.
  2. Stir in tomato sauce, diced tomatoes with juices, Italian seasoning, salt, and pepper. Bring to a simmer, reduce heat to low, and cook 10 minutes.
  3. Beat cream cheese and sour cream until smooth, then fold in 1 cup mozzarella.
  4. Preheat oven to 350°F (175°C). Layer half the noodles, half the meat sauce, all the cream mixture, remaining noodles, and remaining sauce in a greased 9x13 dish. Top with remaining mozzarella and Parmesan.
  5. Bake 25 to 30 minutes until bubbly. Rest 10 minutes, then slice and serve.

Notes

Assemble the casserole (without baking) up to a day ahead and refrigerate it. Add 5 to 10 minutes to the bake time if it goes into the oven cold. Resting after baking helps the squares hold their shape.
