Ingredients

  • 3 cups cold cooked rice, preferably day-old
  • 8 oz flank steak, thinly sliced across the grain
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil, divided
  • 2 large eggs, lightly beaten
  • 1 cup frozen peas and carrots mix, thawed
  • 3 scallions, sliced, white and green parts separated
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Salt and white pepper, to taste

Method

  1. Heat 1 tbsp oil in a large skillet or wok over high heat. Season beef, sear in a single layer 1 minute, then stir-fry 2 minutes until just cooked. Set aside.
  2. Lower heat to medium, add a little more oil if needed, and scramble the eggs until softly set, about 30 seconds. Move to the plate with the beef.
  3. Add the remaining 1 tbsp oil, then stir-fry the garlic and ginger 20-30 seconds. Add white scallion parts and peas and carrots, cook 1 minute.
  4. Raise heat to high, add cold rice, and press into an even layer. Let sit 1 minute, then stir-fry 2-3 minutes until hot and a little toasted.
  5. Return beef and eggs to the pan, add soy sauce, oyster sauce, and sesame oil, and toss 1-2 minutes. Adjust seasoning, top with scallion greens, and serve immediately.

Notes

For the best texture, use cold, day-old rice. If you must use freshly cooked rice, spread it on a baking sheet to cool and dry for 10-15 minutes before frying. Adjust the soy sauce to your taste, and remember that oyster sauce adds saltiness too.
