Beef Fajitas Skillet Recipe

Ingredients
  

  • 1 lb skirt steak, sliced thin against the grain
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil, divided
  • 1 large yellow onion, sliced
  • 2 bell peppers (any color), sliced
  • Juice of 1 lime
  • 8 small flour or corn tortillas, warmed
  • Sour cream, diced avocado, salsa, and fresh cilantro, for serving

Method
 

  1. Toss sliced beef with chili powder, cumin, smoked paprika, garlic powder, salt, pepper, 1 tbsp oil, and juice of ½ lime. Sear over high heat 2-3 minutes per side until charred. Remove from skillet.
  2. Add remaining oil, onion, and bell peppers to the skillet. Cook 4-5 minutes until tender with charred edges.
  3. Return beef to the skillet, add remaining lime juice, and toss 1 minute to combine.
  4. Serve in warm tortillas with sour cream, avocado, salsa, and cilantro.

Notes

Use skirt or flank steak and slice against the grain for the most tender texture. The beef tastes best when quickly seared and still pink in the center.
