- Brown the beef in two batches with the oil over medium-high heat, then set aside.
- Sauté the onion and bell pepper in the same pot until soft, add the garlic, and cook 1 minute.
- Stir in the spices, cocoa, and tomato paste, cook for 1 minute, then pour in the crushed tomatoes and broth with salt and pepper.
- Return the beef to the pot with the beans, bring to a simmer, and cook uncovered for 30 to 40 minutes, stirring occasionally.
- Ladle into bowls, add your favorite toppings, and serve hot.
Notes
The chili thickens as it cools. Let it sit for a few minutes off the heat if it looks too loose. Leftovers keep well and the flavor deepens overnight.
