- Heat oil in a large skillet over medium-high. Add beef and onion, cooking until browned, about 8 minutes. Drain excess liquid.
- Stir in garlic and cook 30 seconds. Add taco seasoning, beans, corn, and enchilada sauce. Simmer 3 minutes until slightly thickened.
- Preheat oven to 375°F (190°C). In a 9x13 dish, layer half of the tortillas, half the beef mixture, and 1 cup cheese. Repeat layers, ending with tortillas and the remaining cheese on top.
- Bake for 20 to 25 minutes until bubbly and golden on top.
- Rest 5 minutes, then slice into squares and serve with cilantro, sour cream, and jalapeños.
Notes
Let the casserole rest for 5 minutes after baking so it slices cleanly. For extra crunch, place the dish under the broiler for the last 1 to 2 minutes of baking. You can assemble the casserole up to a day ahead and refrigerate, then add about 5 minutes to the bake time.
