Ingredients
  

  • 1 lb flank steak, sliced thin against the grain
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 3 tbsp vegetable oil, divided
  • 3 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/2 cup beef broth
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Cooked white rice, for serving

Method
 

  1. Slice the flank steak thin against the grain and toss with 1 tbsp soy sauce and 1 tbsp cornstarch. Let sit 10 minutes.
  2. Sear the beef in 2 batches in 2 tbsp hot vegetable oil, about 1 to 2 minutes per side, then set aside.
  3. Stir-fry the broccoli in the remaining 1 tbsp oil for 3 to 4 minutes until bright green, then add the garlic and ginger and cook 30 seconds.
  4. Whisk the beef broth, soy sauce, oyster sauce, and brown sugar together, pour into the pan, and simmer 1 to 2 minutes. Stir in the cornstarch and water slurry until the sauce thickens.
  5. Return the beef to the pan and toss everything together over high heat for 1 to 2 minutes, then serve hot over rice.

Notes

For the best texture, let the beef marinate the full 10 minutes rather than rushing it, since that's what keeps it tender in the hot pan. This recipe doubles well, but sear the beef in more batches rather than crowding the pan, or it'll steam instead of brown.
