Beef Broccoli Noodle Stir Fry Recipe

Ingredients
  

  • 1 lb flank steak, thinly sliced against the grain
  • 10 oz dried lo mein noodles
  • 3 cups broccoli florets
  • 3 tbsp vegetable oil, divided
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/3 cup reduced-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp toasted sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 1/4 tsp red pepper flakes (optional)

Method
 

  1. Cook the lo mein noodles according to package directions until just tender, about 4 to 6 minutes. Drain and rinse under cold water.
  2. Whisk together the soy sauce, oyster sauce, brown sugar, sesame oil, cornstarch slurry, and red pepper flakes.
  3. Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Sear the beef in two batches, cooking about 1 minute per side until browned, then transfer to a plate.
  4. Add the remaining 1 tbsp oil to the pan. Stir fry the broccoli, garlic, and ginger for 2 to 3 minutes until bright and crisp-tender.
  5. Return the beef and noodles to the pan, pour the sauce over everything, and toss for 1 minute until the sauce thickens and coats the noodles. Serve immediately.

Notes

If you have time to let the sliced beef sit at room temperature for 10 minutes with a light sprinkle of salt, it will sear even more evenly. The stir fry is best eaten right away while the broccoli is still crunchy, but leftovers reheat nicely if you add a splash of water to the pan.
