Ingredients
Method
- Toss the beef with 1 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp vegetable oil. Let sit 10 minutes while you prep the vegetables and sauce.
- Heat a large skillet or wok over high heat. Add 1 tbsp oil, then sear the beef in a single layer about 2 minutes per side. Remove to a plate.
- Add the remaining 1 tbsp oil. Sauté the onion and peppers for 3 minutes, then add garlic and ginger and cook 30 seconds.
- Whisk the remaining 1 tbsp soy sauce, oyster sauce, brown sugar, 1 tsp cornstarch, and water. Pour into the pan, return the beef, and toss until glossy, about 1 minute. Drizzle with sesame oil if using.
- Spoon over rice, scatter with sesame seeds and green onions, and serve hot.
Notes
Slice the beef against the grain so the short fibers stay tender during the quick sear. If the peppers release water in the pan, just keep the heat high and let it steam off before adding the sauce.
