Beef and Pepper Rice Bowls Recipe

Ingredients
  

  • 1 lb flank steak or sirloin, sliced thin
  • 2 tbsp vegetable oil, divided
  • 2 bell peppers, sliced
  • 1 medium yellow onion, sliced
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar, packed
  • 3 tsp cornstarch, divided
  • 1/3 cup water
  • 1 tsp sesame oil
  • 4 cups cooked white or brown rice, warm
  • Sliced green onions and sesame seeds, for serving

Method
 

  1. Toss beef with 1 tbsp soy sauce, 1 tsp cornstarch, and sesame oil. Heat 1 tbsp vegetable oil in a large skillet over high heat. Sear beef in a single layer 2 minutes, toss, and cook 1 minute more. Transfer to a plate.
  2. Add remaining 1 tbsp oil to the skillet. Cook peppers and onion 3 to 4 minutes until softened, then stir in garlic and ginger for 30 seconds.
  3. Whisk together remaining 3 tbsp soy sauce, brown sugar, 2 tsp cornstarch, and water. Pour into the skillet, return beef, and cook 1 to 2 minutes until the sauce thickens.
  4. Spoon over warm rice and top with green onions and sesame seeds.

Notes

If your skillet is smaller, sear the beef in two batches to keep the heat high. The rice is not included in the prep time; cook it while you prep the other ingredients or use day-old rice.
