Beef and Onion Stir Fry Recipe

Ingredients
  

  • 1 lb flank steak, thinly sliced against the grain
  • 2 tbsp soy sauce, divided
  • 1 tbsp cornstarch
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • ¼ tsp red pepper flakes
  • 2 tbsp vegetable oil
  • 1 large yellow onion, halved and sliced ¼-inch thick
  • 2 scallions, sliced

Method
 

  1. Whisk together 1 tbsp soy sauce, oyster sauce, brown sugar, garlic, ginger, red pepper flakes, ¼ cup water, and 1 tsp cornstarch. Set aside.
  2. Toss sliced beef with remaining 1 tbsp soy sauce and remaining 2 tsp cornstarch. Sear in a hot wok with 1 tbsp oil, working in 2 batches, 2 minutes per side until browned. Transfer to a plate.
  3. In the same pan, stir fry the onion with a pinch of salt for 3-4 minutes until softened and charred at the edges.
  4. Return beef to the pan, add the sauce, and toss for 1 minute until thickened and glossy. Scatter scallions on top and serve immediately.

Notes

For the cleanest slices, pop the steak in the freezer for 15 minutes before cutting. The sauce thickens fast off the heat, so serve it right away—it’s at its glossiest straight from the wok.
