Beef and Green Bean Stir Fry Recipe

Ingredients
  

  • 1 lb flank steak or sirloin, sliced thin against the grain
  • 12 oz fresh green beans, trimmed and dried
  • 2 tbsp vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce, divided
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 tsp toasted sesame oil
  • Sliced green onions and sesame seeds for serving

Method
 

  1. Toss the sliced beef with 1 tablespoon soy sauce and the cornstarch slurry. Set aside for 10 minutes.
  2. Heat 1 tablespoon oil in a wok over high heat. Stir-fry the green beans for 4 to 5 minutes until blistered, then transfer to a plate.
  3. Heat the remaining 1 tablespoon oil in the same pan. Sear the beef in a single layer for about 1 minute per side until browned, then transfer to the plate.
  4. Lower heat to medium, add garlic and ginger, and stir for 30 seconds. Pour in the remaining 2 tablespoons soy sauce, oyster sauce, and brown sugar. Simmer for 20 seconds, then return beef and green beans to the pan. Toss for 1 minute, finish with sesame oil, and serve immediately over rice with green onions and sesame seeds.

Notes

The 10-minute resting time for the beef isn’t counted in prep since you’ll be trimming and mincing while it sits. If you like a thicker sauce, double the cornstarch slurry.
