- Slice the flank steak against the grain into 1/4‑inch strips. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, sugar, and cornstarch slurry.
- Heat 1 tablespoon oil in a wok or large skillet over high heat. Sear the beef in a single layer for about 1 minute without moving, then stir-fry until just cooked, about 2 minutes. Transfer to a plate.
- Add the remaining 1 tablespoon oil to the pan, reduce heat to medium-high, and stir the garlic and ginger for 30 seconds. Add the cabbage and a pinch of salt; cook, tossing constantly, until wilted but still crisp, 3 to 4 minutes.
- Return the beef to the pan, pour the sauce over everything, and toss for about 1 minute until bubbly and glossy. Serve hot, topped with scallions and sesame seeds.
Notes
If you’re short on time, buy pre-sliced stir-fry beef from the butcher. The cabbage keeps its best texture when cooked quickly over high heat, so avoid letting it sit in the pan once it’s done.
