Ingredients

  • 1 lb flank steak, sliced thinly against the grain
  • 4 cups broccoli florets
  • 3 tbsp soy sauce, divided
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch mixed with 3 tbsp cold water
  • 1/4 tsp baking soda
  • 2 tbsp vegetable oil
  • Steamed white rice, for serving

Method

  1. Toss the sliced beef with 1 tbsp soy sauce, 1 tsp vegetable oil, and the baking soda. Let it marinate for 10 minutes.
  2. Heat the remaining oil in a large skillet over high heat. Sear the beef in a single layer for about 2 minutes per side until browned but not fully cooked through. Remove from the pan.
  3. Add 3 tbsp water and the broccoli to the same skillet. Cover and steam for 2 to 3 minutes until bright green and crisp-tender. Uncover and let any remaining water evaporate.
  4. Whisk the remaining 2 tbsp soy sauce, oyster sauce, brown sugar, sesame oil, garlic, ginger, and the cornstarch slurry together. Pour over the broccoli, bring to a simmer, then return the beef and any juices. Toss until the sauce thickens and coats everything, about 1 minute. Serve immediately over steamed rice.

Notes

If you love extra sauce for your rice, double the sauce ingredients and the cornstarch slurry while keeping the beef and broccoli amounts the same. It also works well with cauliflower rice for a lower-carb plate.
