Beef And Broccoli Ramen Stir Fry Recipe

Ingredients
  

  • 8 oz flank steak or sirloin, sliced thin against the grain
  • 3 cups broccoli florets
  • 3 packs instant ramen noodles, seasoning packets discarded
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp cornstarch
  • ⅓ cup water
  • 2 tbsp neutral oil
  • 1 tsp toasted sesame seeds
  • 2 green onions, sliced

Method
 

  1. Whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, cornstarch, and water in a small bowl.
  2. Cook the ramen noodles 1 minute short of package directions, drain, rinse with cool water, and toss with a little oil.
  3. Heat 1 tbsp neutral oil in a large skillet over high heat, sear the beef in a single layer for about 1 minute per side, then remove to a plate.
  4. Add the remaining 1 tbsp oil and the broccoli, stir for 30 seconds, add 2 tbsp water, cover, and steam for 2 minutes until bright green and crisp-tender.
  5. Uncover, pour in the sauce, and stir for 30 seconds until it bubbles. Add the noodles and beef back to the pan, toss for 1 minute until coated and hot.
  6. Serve immediately topped with sesame seeds and green onions.

Notes

The sauce thickens quickly once it hits the pan, so keep the heat at medium when you add it and stir constantly to avoid clumps. If the noodles seem a little tight after sitting, reheat with a splash of water.
