Beef and Bean Burritos Recipe

Ingredients
  

  • 1 lb ground beef, 85% lean
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 (15-oz) can pinto beans, drained and rinsed
  • ¼ cup water or low-sodium beef broth
  • 4 large (10-inch) flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Toppings: sour cream, salsa, avocado, as desired

Method
 

  1. Brown the beef and onion in a large skillet over medium-high heat with a drizzle of oil until the meat is no longer pink, about 6 to 8 minutes. Stir in the garlic and cook 30 seconds.
  2. Stir in the tomato paste, chili powder, cumin, salt, pepper, water, and beans. Simmer on low for 5 minutes until the liquid thickens.
  3. Warm the tortillas one at a time in a dry skillet for 20 seconds per side, or microwave them for 30 seconds under a damp paper towel.
  4. Spoon about ½ cup filling onto each tortilla, top with cheese, fold, and serve immediately with your favorite toppings.

Notes

The filling can be made a day ahead and reheated gently in a skillet with a splash of water. If you use 90% lean ground beef, you may need a little extra oil when browning to keep it from sticking. For a crisp exterior, toast the assembled burrito in a dry skillet for 1 minute per side.
