Bean and Cheese Burrito Recipe

Ingredients
  

  • 2 (10-inch) flour tortillas
  • 1 (16 oz) can refried beans
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground cumin
  • ⅛ tsp salt
  • 2 tbsp unsalted butter, divided
  • 1 cup shredded Monterey Jack cheese

Method
 

  1. In a small bowl, stir together the refried beans, garlic powder, onion powder, cumin, and salt until combined.
  2. Spread the seasoned beans onto the center of each tortilla. Sprinkle ½ cup of cheese over each. Fold the sides in, then roll up tightly.
  3. Melt 1 tbsp butter in a skillet over medium heat. Place the burritos seam side down and cook for 3 to 4 minutes until golden. Flip, add the remaining 1 tbsp butter, and cook another 3 minutes, pressing gently with a spatula. Slice in half and serve immediately.

Notes

If your refried beans are already well seasoned, you may want to cut back on the added salt. Let the burritos rest for a minute after frying so the cheese sets slightly and doesn’t run out on the first bite.
