BBQ Whole Chicken Recipe

Ingredients
  

  • 1 whole chicken (3 to 4 lb / 1.4 to 1.8 kg)
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce (optional)
  • 1 tsp vegetable oil

Method
 

  1. Spatchcock the chicken, season it with salt, pepper, garlic powder, onion powder, and paprika, and refrigerate uncovered for at least 1 hour.
  2. Whisk together the ketchup, brown sugar, vinegar, Worcestershire, and hot sauce. Reserve 1/4 cup for a final glaze.
  3. Preheat grill to 400°F (200°C) with two-zone heat. Place chicken skin-side up on the cool side and cook 35 to 40 minutes, until breast reaches 150°F (65°C).
  4. Move chicken to hot side, skin-side down. Baste with sauce, cook 3 to 4 minutes, flip, baste again, and cook 3 to 4 minutes more.
  5. Brush with reserved sauce, rest 10 minutes, then carve and serve.

Notes

Let the chicken come out of the fridge 30 minutes before grilling so it cooks more evenly. If flare-ups happen, move the bird back to the indirect zone until the flames die down.
