Method
- Remove the thin white membrane from the back of the ribs using a knife and paper towel.
- Combine the first 7 dry rub ingredients in a small bowl. Pat ribs dry, then coat both sides with the rub, pressing it in.
- Preheat oven to 300°F (150°C). Wrap ribs tightly in two layers of foil and place on a baking sheet. Bake for 2 to 2.5 hours until meat pulls back from the bone ends.
- While ribs bake, simmer ketchup, vinegar, 2 tbsp brown sugar, Worcestershire, mustard, and liquid smoke for 10 minutes. Open foil, drain liquid, brush sauce on ribs, and bake uncovered for 30 minutes.
- Move rack to upper third, broil on high for 2 to 4 minutes, turning once, until sauce bubbles and chars in spots. Rest 5 minutes, then slice.
Notes
The membrane removal is key for tender ribs. If you prefer a spicier rack, double the cayenne in the rub and add a few dashes of hot sauce to the glaze.
