- Remove the membrane from the ribs. Mix the brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub the mixture over both sides of the ribs and let them sit for 10 minutes.
- Whisk the BBQ sauce and cider vinegar together.
- Pour a thin layer of sauce into the slow cooker. Stand the ribs upright, meat sides against the walls, and pour the rest of the sauce over top. Cover and cook on LOW for 7 hours, or HIGH for 4 to 5 hours.
- Preheat the broiler. Place the ribs meat-side up on a foil-lined baking sheet, spoon over some cooking liquid, and broil for 3 to 5 minutes until bubbly and charred.
- Let the ribs rest 5 minutes, then slice between the bones. Serve with extra sauce.
Notes
Cooking times are for tender, pull-apart ribs. If you prefer them with a bit more chew, shave 30 minutes off the low setting. The broil is where the char happens, so watch closely. Leftover ribs reheat beautifully the next day.
