BBQ Dry Rub Recipe

Ingredients
  

  • ¼ cup packed brown sugar
  • 2 tbsp smoked paprika
  • 1 tbsp kosher salt
  • 2 tsp black pepper
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp ground cumin
  • ½ tsp cayenne pepper

Method
 

  1. In a medium bowl, combine the brown sugar, smoked paprika, kosher salt, black pepper, chili powder, garlic powder, onion powder, cumin, and cayenne if using.
  2. Whisk the mixture well until the color is even and no clumps of brown sugar remain.
  3. Transfer to a clean jar with a tight lid, label it, and store in a cool, dark spot.

Notes

The salt level is built around Diamond Crystal kosher salt. If your salt is finer (like Morton’s) or you are using fine sea salt, reduce to 2 teaspoons so the rub does not become overly salty. For the deepest flavor on meat, apply the rub at least 30 minutes ahead or let it sit in the fridge overnight uncovered. Pat the meat dry first so the spices stick.
