- Heat oven to 425°F (220°C) with rack in upper-middle position. Toss wings with baking powder, salt, and pepper until dry and coated.
- Arrange wings on a wire rack over a foil-lined baking sheet, not touching. Bake 30 minutes, flip, then bake 25-30 minutes more until deep golden and crisp.
- Combine barbecue sauce, melted butter, honey, and vinegar in a saucepan. Simmer 4-5 minutes until thick and syrupy.
- Toss hot wings with the glaze, return to rack, and broil on high 2-3 minutes per side until bubbly and dark in spots.
- Pile onto a platter and garnish with scallions or parsley and a pinch of flaky salt. Serve hot.
Notes
Pat the wings completely dry before seasoning, any moisture left on the skin will steam and prevent crisping. If you want less mess, line the baking sheet with parchment under the foil. For a smoky flavor without a grill, stir 1/2 tsp Liquid Smoke into the barbecue sauce.
