Method
- Season chicken with salt, pepper, garlic powder, and smoked paprika. Set up flour, beaten eggs, and panko in three bowls. Dredge each tender in flour, egg, then panko, pressing to coat well.
- Preheat oven to 425°F (220°C). Place a wire rack on a baking sheet and grease it. Arrange tenders on the rack, spray with oil, and bake 12 minutes until golden.
- Remove from oven and keep tenders on the rack. Dip each tender in barbecue sauce to coat and return to the rack.
- Return to the oven and bake 5 to 7 minutes, until the sauce is bubbly and dark around the edges and the chicken reaches 165°F (74°C) inside.
- Transfer to a plate, spoon any pan drippings over the top, and serve immediately.
Notes
If you want extra sauce for dipping, warm an additional 1/4 cup of barbecue sauce and set it out in a small bowl. Leftovers reheat best in the oven or air fryer to return the crisp.
