BBQ Chicken Pizza Recipe

Ingredients
  

  • 1 lb store-bought pizza dough, at room temperature
  • 1/2 cup BBQ sauce (for tossing the chicken)
  • 2 tbsp BBQ sauce (for brushing the dough)
  • 2 cups shredded cooked chicken
  • 2 cups shredded low-moisture mozzarella
  • 1/2 cup shredded smoked gouda
  • 1/4 small red onion, thinly sliced
  • 2 tbsp chopped fresh cilantro
  • Cornmeal or flour for dusting

Method
 

  1. Place an inverted baking sheet in the oven and heat to 475°F (245°C). Stretch the dough on a floured piece of parchment into a 12-inch round.
  2. In a bowl, toss the shredded chicken with the 1/2 cup BBQ sauce until fully coated.
  3. Slide the parchment and dough onto the hot sheet. Brush the surface with 2 tbsp BBQ sauce. Sprinkle two-thirds of the mozzarella, add the saucy chicken and onion, then top with the remaining mozzarella and gouda.
  4. Bake 13 to 15 minutes, until the crust is golden and the cheese is bubbly with a few browned spots. Rotate once halfway through.
  5. Let cool 1 minute, then scatter cilantro on top. Slice and serve immediately.

Notes

If you want a thicker crust, use a whole 1-lb ball of dough and stretch it to a smaller oval. The edges will puff up more, but the baking time may extend by 1 to 2 minutes.
