- Preheat the oven to 400°F (200°C) and line a rimmed sheet pan with parchment. Shred the chicken and toss it with the ½ cup BBQ sauce until coated.
- Spread half the chips on the pan, top with 1 cup cheese, then all the chicken. Add the remaining chips and the last cup of cheese. Get the pan into the oven within 5 minutes.
- Bake for 8 to 10 minutes until the cheese is melted and the chip edges are just starting to brown.
- Remove from the oven and immediately top with jalapeños, sour cream dollops, cilantro, and an extra drizzle of BBQ sauce if you like. Serve right from the hot pan.
Notes
If the sour cream is cold from the fridge, let it sit out while you assemble the nachos so it warms slightly and spreads without cooling everything down. For extra insurance against soggy chips, briefly toast the plain chips on the sheet pan for about 3 minutes before layering.
