BBQ Chicken Marinade Recipe

Ingredients
  

  • 1/2 cup ketchup
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 pounds chicken pieces (breasts, thighs, or drumsticks)

Method
 

  1. Whisk all the marinade ingredients in a medium bowl until smooth.
  2. Pour the marinade over the chicken in a bag or dish, coat evenly, and refrigerate for 30 minutes to 4 hours.
  3. Preheat a grill to medium‑high (400°F/200°C) or an oven to 425°F (220°C). Remove the chicken from the marinade, letting excess drip off, and cook. Grill 6–7 minutes per side or bake 20–25 minutes, until 165°F (74°C).
  4. Rest the chicken 5 minutes, slice against the grain, and spoon any resting juices over the top before serving.

Notes

The marinade that touched raw chicken is not safe to use as a sauce unless boiled for several minutes. For a fresh basting sauce, set aside a few tablespoons of marinade before it contacts the chicken. Marinating time is not included in prep time.
