- Preheat oven to 425°F (220°C). Toss the shredded chicken with 1/2 cup barbecue sauce until well coated.
- Place the flatbreads on a baking sheet. Brush the edges with olive oil, then spread a thin layer of sauce on each. Scatter cheese, sauced chicken, and sliced red onion evenly over the top.
- Bake for 10 to 12 minutes, until the cheese is bubbly and the flatbread edges are deep golden.
- Remove from the oven, top with cilantro, drizzle with extra barbecue sauce, and cut into wedges. Serve hot with lime wedges.
Notes
If you prefer a smokier flavor, use smoked gouda and finish the flatbread under the broiler for 1 minute after baking — watch it closely so it doesn’t burn.
