BBQ Chicken Casserole Recipe

Ingredients
  

  • 4 cups shredded cooked chicken
  • 8 oz egg noodles
  • 1 ½ cups barbecue sauce
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup frozen corn, thawed and patted dry
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, seeded and minced, plus 1 tsp adobo sauce
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Cook egg noodles in salted boiling water until just al dente, about 6 minutes. Drain and set aside.
  2. Warm olive oil in a skillet over medium heat. Sauté onion with a pinch of salt until soft, 5 minutes. Add garlic, corn, and chipotle with adobo sauce; cook 2 minutes more.
  3. In a large bowl, beat cream cheese and sour cream until smooth. Stir in barbecue sauce, then fold in shredded chicken, the sautéed mixture, black beans, 1 cup cheddar, salt, and pepper. Add noodles and toss to coat.
  4. Transfer to a greased 9x13 inch baking dish. Top with remaining 1 cup cheddar.
  5. Bake until bubbly at the edges, 20 to 25 minutes. Switch to broil, move rack to top position, and broil 2 to 3 minutes until cheese is golden. Let rest 5 minutes before serving.

Notes

If using a smaller 8x8 inch dish, bake 30 to 35 minutes. The casserole sets up best after a brief rest, so don’t skip the 5-minute cool before scooping.
