- Season the chicken with smoked paprika, garlic powder, onion powder, salt, and pepper. Sear in 1 tbsp olive oil over medium-high heat for 5 minutes per side, then brush with BBQ sauce and cook 1 minute more. Transfer to a cutting board.
- In the same skillet, warm the remaining 1 tbsp oil, black beans, and corn for 2 minutes, scraping up browned bits. Season with a pinch of salt.
- Stir together the sour cream, lime juice, and a small pinch of salt to make the crema.
- Slice the chicken against the grain, then divide rice, chicken, beans, corn, avocado, and red onion among 4 bowls.
- Drizzle the lime crema over each bowl, scatter cilantro, and serve with lime wedges and extra BBQ sauce.
Notes
The crema can be made a day ahead and kept chilled. If you have time, let the seasoned chicken sit at room temperature for 15 minutes before you cook it, the spices cling better and the meat cooks more evenly.
