- Preheat oven to 400°F. Poke potatoes, rub with oil and salt, and bake directly on the rack for 50-60 minutes until fork-tender.
- While potatoes bake, combine shredded chicken and BBQ sauce in a skillet over medium heat. Cook 5 minutes, stirring, until hot and glossy.
- Slice potatoes open, fluff the insides with a fork, add a pat of butter and a pinch of salt, then pile the BBQ chicken on top.
- Sprinkle cheese over the chicken, place potatoes on a baking sheet, and broil 2-3 minutes until cheese melts and bubbles.
- Dollop with sour cream, scatter green onions, and serve immediately.
Notes
If starting with raw chicken, cook 1 1/4 pounds boneless thighs or breasts in a skillet until done, then shred and proceed. Rotisserie chicken keeps the prep time short and adds a nice flavor.
