Bang Bang Shrimp Tacos Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • ⅓ cup cornstarch
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • ½ cup neutral oil
  • 8 small flour tortillas
  • 2 cups finely shredded green cabbage
  • 1 lime, cut into wedges
  • Handful fresh cilantro leaves (optional)
  • ⅓ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1 to 2 tsp sriracha
  • Pinch of salt

Method
 

  1. Whisk mayonnaise, sweet chili sauce, sriracha, and a pinch of salt together in a small bowl. Set aside.
  2. Pat shrimp dry, season with ½ tsp salt and pepper, then toss with cornstarch until lightly coated. Shake off excess.
  3. Heat oil in a skillet over medium-high heat until shimmering. Fry shrimp in a single layer for about 2 minutes per side until golden and cooked through. Drain on paper towels.
  4. Warm tortillas in a dry skillet over medium heat, about 30 seconds per side, until lightly charred. Cover to keep warm.
  5. Toss fried shrimp with the sauce, then divide among tortillas. Top with cabbage, lime juice, and cilantro. Serve immediately.

Notes

If you can, use a kitchen scale: 1 pound of 21-25 count shrimp gives you about 20 to 25 pieces, enough for 8 generously filled tacos. Toasting the tortillas directly over a gas flame on low heat adds an extra layer of char.
