Bang Bang Shrimp Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • Vegetable oil, for frying
  • 1/4 cup mayonnaise
  • 3 tbsp Thai sweet chili sauce
  • 1 to 2 tsp sriracha
  • 1 tsp rice vinegar
  • 1/4 tsp kosher salt
  • Sliced green onions and toasted sesame seeds, for serving

Method
 

  1. Whisk mayonnaise, sweet chili sauce, sriracha, rice vinegar, and salt in a bowl until smooth.
  2. Pat shrimp dry, then toss with cornstarch and a pinch of salt until each piece is white and dusty.
  3. Heat oil in a skillet; fry shrimp in a single layer over medium-high heat for 2-3 minutes per side until golden and crisp.
  4. Transfer hot shrimp to a bowl, pour sauce over, and toss gently until glossy.
  5. Pile onto a plate, top with green onions and sesame seeds, and serve immediately.

Notes

The shrimp are crispiest right out of the oil, so serve as soon as they are sauced. If you need to keep them warm before tossing, place them on a wire rack in a 200°F oven for up to 10 minutes.
