Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil, for frying
  • 1/4 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey
  • 1 tsp lime juice
  • 2 cups cooked jasmine rice, warm
  • 1 cup shredded red cabbage
  • 1/2 English cucumber, thinly sliced
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • Toasted sesame seeds, for garnish

Method
 

  1. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl. Set aside.
  2. Put cornstarch in one bowl, beaten eggs in a second, and panko mixed with garlic powder, salt, and pepper in a third. Dredge each shrimp in cornstarch, then egg, then panko.
  3. Heat about 2 tbsp vegetable oil in a large skillet over medium-high heat. Fry shrimp in a single layer for 2 minutes per side until golden and crisp, working in batches and adding oil as needed.
  4. Place the hot shrimp in a bowl, pour the sauce over them, and toss gently to coat.
  5. Divide the warm rice among bowls. Top with cabbage, cucumber, avocado, and shrimp. Garnish with green onions and sesame seeds. Serve immediately.

Notes

These bowls are best assembled right before serving so the shrimp stay crisp. If you prep components ahead, store them separately and toss the shrimp in the sauce just before you build the bowls.
