Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup mashed very ripe banana
  • ½ cup buttermilk, at room temperature
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup whole milk
  • 1 tsp banana extract
  • 1½ cups cold heavy whipping cream
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract

Method
 

  1. Preheat oven to 350°F. Cream butter and sugar until fluffy, then add eggs, vanilla, and mashed banana. Mix in buttermilk, then fold in sifted dry ingredients. Pour into a greased 9x13-inch pan and bake 30-35 minutes until a toothpick comes out clean.
  2. Cool the cake 10 minutes, then poke holes all over with a skewer. Whisk evaporated milk, sweetened condensed milk, whole milk, and banana extract; pour slowly over the warm cake. Cool to room temperature, then refrigerate uncovered at least 2 hours.
  3. Whip cold cream with powdered sugar and vanilla to stiff peaks.
  4. Spread the whipped cream over the chilled cake, cover, and refrigerate at least 4 hours or overnight.
  5. Slice into squares and serve cold, scooped right from the pan.

Notes

Chill the cake overnight for the cleanest slices and the creamiest texture. If you have time, let the baked cake sit with the milk soak at room temperature for a full 20 minutes before refrigerating so it absorbs every drop.
