Ingredients

  • 4 cups whole milk
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 6 large egg yolks
  • 2 tsp vanilla extract
  • 1/4 tsp fine sea salt
  • 1 box (11 oz) vanilla wafers
  • 4 to 5 ripe bananas
  • 2 cups cold heavy cream
  • 1/4 cup powdered sugar

Method

  1. Whisk sugar, cornstarch, salt, and egg yolks until thick. Slowly whisk in milk, then cook over medium heat, stirring constantly, until bubbly and thick (8 to 10 minutes). Off heat, stir in vanilla, cover with plastic wrap directly on the surface, and refrigerate until cold, at least 2 hours.
  2. Whip heavy cream with powdered sugar to soft peaks. Refrigerate.
  3. Slice bananas. In a trifle dish, layer wafers, then custard, then bananas. Repeat layers twice, ending with custard on top.
  4. Spread whipped cream over top, cover, and chill at least 4 hours. Garnish with crushed wafers and serve cold.

Notes

The custard needs at least 2 hours to chill before layering, and the assembled trifle should chill at least 4 hours (overnight is best). These chilling times are inactive; plan to make it ahead for the best texture.
